Mayonaise probably is one of the things that we’d like to buy on the store but don’t think to make it at home. While actually making Mayonaise is so simple you only need about 5 minutes to do it.
This mayo version is not a vegan version as it contains Raw Egg, as most mayo does. But at least we could use a better quality of oil like avocado oil or olive oil. As Mayo basically is a mix of Egg and Oil with other seasoning in between. And we also could eliminate sugar like some canned mayo had.
Most Mayo in the store would probably use a palm or sunflower oil which is more inflammatory because of how it processed than avocado / olive oil. And so when we make it at home, we can ensure that when we eat our mayonaise, we are eating a good fat from the oil.
Oil. You can use avocado oil or a light olive oil. It is better to use light olive oil than virgin olive oil as the virgin olive oil has a stronger taste and smell.
- 1 egg
- 1 cup light olive oil
- 1/4 tsp white vinegar (i use apple cider vinegar)
- 1/4 to 1/2 tsp dijon mustard
- 1/4 tsp salt
- 1 tbs lemon juice (squeezed lemon)
There’s only 1 step of how to do this, is to put everything in a jar that comes with the hand mixer (or me is using a measuring cup). You’ll need a not too big jar as it will be harder to mix everything when it emulsifies.
Put the hand mixer at the bottom of the jar and start mixing it (stay in the bottom until it emulsifies to the top – don’t move your hand mixer). Once it emulsifies, you could see that there are areas that are not well combined, then you could move the hand mixer up and down to combine everything.
When everything is well combined, you’ll have a creamy mayonaise texture. Stir with a spoon and it’s done!
There are a lot of things we could do with a Mayo, from a caesar salad to steak dish. Store the mayo in a jar and put it on the fridge, it could last for a week. And when it’s all used, you can simply make a new batch again and store it for another week 🙂
