When eating healthy is also tasty proven by this Einkorn Banana Bluberry Loaf. It’s moist, delicate and has a rich taste to it. The sweetness of banana, sourness of blueberry and sense of dark chocolate chips in between. This recipe is perfect, well at least to my husband lol
Flour. You can use any kind of gluten free flour, i use my einkorn flour for the first time in baking and surprisingly the texture is so moist and perfect for a banana cake.
Butter. I use vegan butter.
Banana. You’ll need ripe banana, find the one that has black spots already as it will be more sweet in taste and smells better.
Sugar. I use coconut sugar.
Eggs. You’ll need two whole eggs.
Baking powder and baking soda. We’re going to use both of these.
Toppings. I use dark chocolate chips and blueberries. A little tips on the chocolate chips is to mix them with a little bit of flour until every pieces of the choco chips covered in flour before putting it to the bowl. This way, the choco chips wont sink to the bottom when it’s baked.
- 150 gr ripe bananas
- 100 gr vegan butter
- 120 gr coconut sugar
- 150 gr einkorn flour
- 2 eggs
- 1 tsp baking soda
- 1 tsp baking powder
- Dark Chocolate chips
Mix well everything exclude choco chips and blueberries with a mixer until it’s mixed well. Making a banana loaf probably the easiest to mix because we basically don’t need to time it or wait until it’s getting puffy. Simply mix them well and put the toppings inside, use a spatula to mix well the toppings and bake it for about 40 minutes in 150 C .
You’ll need a baking tray with baking sheet on top of it, layer it with a little bit butter to prevent the sticky. When it’s finished, let it cool down before taking it out.
