Gluten Free Lemon Berry Muffin

Muffins! It’s always something that we can be creative about! The fillings, the toppings and even the ingredients! There are so much more to make with a muffin. And so you could try this one. It’s easy, it’s delish! Imagining the smell of Lemon itself is already so intriguing lol

Flour. I use two kinds of flours in this recipe which are Almond Flour and Oat Flour.

Fillings. I use lemon and strawberries, but feel free to get creative with the fillings and toppings. And keep in mind that using raw fruits here, it will be quicker to mold .

Ingredients :

  • 1 cup oat flour
  • 1 cup almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk (dairy or non dairy)
  • 1 lemon juice
  • 1 tbs coconut oil
  • 2 tbs honey
  • 1 Lemon zest

Steps :

  • Whisk all the dry ingredients (flours, baking powder, salt), set aside
  • Whisk all the wet ingredients (eggs, vanilla, milk, lemon juice, lemon zest, milk, honey and oil), set aside
  • Mix together the wet to dry ingredients
  • Add the fruits fillings, whisk homogeneously
  • Put in to the muffin’s cups
  • Bake in 150 C for 30-35 minutes
